Maple Dill Carrots

6 1 pound carrots, peeled and diced large 1 tablespoon minced fresh dill 1 tablespoon pure maple syrup 1 tablespoon ghee 1/2 teaspoon sea salt 1 cup water 1 Add all ingredients to Instant Pot®. Lock lid. 2 Press the Manual button and adjust time to 5 minutes. When the timer beeps, let the pressure release naturally until the float valve drops and then unlock lid. 3 Transfer to a serving dish and serve warm. Spiced Applesauce • Hands-On Time: 20 minutes • Cook Time: 8 minutes Yields 10 cups 4 pounds variety of apples, cored and chopped 1 cinnamon stick 2 whole star anise 6 whole allspice 1/2 cup freshly squeezed orange juice 1/3 cup honey 1/2 teaspoon sea salt 1/3 cup water 1 Add the apples, cinnamon stick, star anise, whole allspice, orange juice, honey, salt, and water to the Instant Pot®. (Alternatively, add the cinnamon stick, star anise, and whole allspice to a spice bag for easy retrieval after cooking.) 2 Press the Manual or Pressure Cook button and adjust time to 8 minutes. When timer beeps, quick-release pressure until float valve drops and then unlock lid. 3 Remove cinnamon stick, star anise, and whole allspice. 4 Use an immersion blender to blend the ingredients in the pot until desired consistency is reached. Cherry-Rosemary Pork Tenderloin • Hands-On Time: 5 minutes • Cook Time: 30 minutes Serves 6 2 tablespoons avocado oil 2 (3-pound) pork tenderloins, halved 1/2 cup balsamic vinegar 1/4 cup olive oil 1/4 cup cherry preserves 1/2 teaspoon sea salt 1/4 teaspoon ground black pepper 1/4 cup finely chopped fresh rosemary 4 garlic cloves, minced 1 Press the Sauté button on the Instant Pot®. Heat oil. Brown pork on all sides, about 2 minutes per side (4 sides total). 2 In a small bowl, whisk remaining ingredients together and pour over the pork. Lock lid. 3 Press the Manual button and adjust time to 20 minutes. When timer beeps, let the pressure release naturally for 5 minutes. Quick-release any additional pressure until float valve drops and then unlock lid. 4 Transfer tenderloin to a cutting board. Let rest for 5 minutes. Slice into medallions and serve. INSTANT POT® OPTIONS Do you have some fresh cherries you need to use? Instead of the cherry preserves, try this Quick Homemade Cherry Coulis. Place about 1/4 cup pitted and quartered cherries, 1/4 cup water, and 1/4 cup pure maple syrup in a small saucepan. Bring to a boil, simmer for 10 minutes until reduced by half, then “smoosh” the cherries against the side of the pan. Let cool and use this in place of the preserves
